Deliciously Decadent: Black Pudding Stuffed Mushrooms

Mushrooms have a unique ability to absorb flavours, making them an ideal base for showcasing the rich and savoury taste of black pudding. Whether you're hosting a dinner party or simply looking to elevate your culinary repertoire, these stuffed mushrooms are sure to impress.



- 4 portobello mushrooms

- 150g black pudding, crumbled

- 1/4 cup breadcrumbs

- 2 cloves garlic, minced

- 2 tablespoons fresh parsley, chopped

- 2 tablespoons olive oil

- Salt and pepper to taste

- Grated Parmesan cheese (optional, for garnish)



1. Prepare the Mushrooms:

   - Preheat your oven to 200°C

   - Clean the mushrooms by wiping them with a damp paper towel to remove any dirt. Remove the stems from the mushrooms and set aside.


2. Prepare the Filling:

   - In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

   - Add the crumbled black pudding to the skillet and cook until it's browned and cooked through, breaking it apart with a spatula as it cooks.

   - Once the black pudding is cooked, remove the skillet from the heat and stir in the breadcrumbs and chopped parsley. Season with salt and pepper to taste.


3. Stuff the Mushrooms:

   - Using a spoon, fill each mushroom cap with the black pudding mixture, pressing down gently to ensure it's packed tightly.

   - Place the stuffed mushrooms on a baking sheet lined with parchment paper or aluminum foil.


4. Bake the Stuffed Mushrooms:

   - Drizzle the remaining tablespoon of olive oil over the stuffed mushrooms.

   - Sprinkle grated Parmesan cheese over the stuffed mushrooms.

   - Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown and crispy.


5. Serve and Enjoy:

   - Arrange the stuffed mushrooms on a serving platter and garnish with additional fresh parsley, if desired.

   - Serve warm and enjoy the delicious combination of flavours and textures!
