Creamy Pasta with White Pudding, Bacon & Mushrooms by @scoffie_

Ingredients (serves 4)


  • 3 shallots

  • 4 diced bacon rashers or lardons

  • 4 slices of White Pudding

  • Handful of diced chestnut mushrooms

  • 2 minced garlic gloves

  • 200ml single cream

  • Tsp smoked paprika

  • Salt & pepper


  1. Grill or fry your White Pudding slices then put to one side.

  2. Put your pasta on to boil.

  3. Add some oil to a nonstick pan and gently fry the bacon, mushrooms, shallots and garlic together until the shallots are soft and translucent.

  4. Crumble the White Pudding into the pan, saving one slice to use at the end.

  5. Save 1/2 mug of pasta water then drain and add pasta to the pan.

  6. Add in the cream and pasta water, stir gently to combine until the sauce is glossy and all the pasta is coated.

  7. Add the smoked paprika and season with salt and pepper - taste and adjust.

  8. Transfer the pasta into bowls then crumble the remaining White Pudding on top.
